Aponiente

At a glance

Aponiente is Ángel León’s restaurant in a former tidal mill in El Puerto de Santa María, Cádiz. It has three stars in Michelin’s 2026 selection. Marine ingredients, research and the surrounding marshland shape a tasting-menu experience that extends beyond conventional fish courses.

The current menu and marshland route

The main 2026 menu PDF lists the tasting menu at €400 per person, VAT included. Its marshland component depends on wind, tides, insects and other natural conditions; the experience can take place entirely indoors. An outdoor section is therefore not guaranteed. The current page also links an older April menu file, so use the main June PDF and the terms quoted for the selected date.

Pairings and the separate special menu

The PDF lists NoLo pairing at €180, Albariza at €220 and Diatomeas at €350 per person, VAT included. NoLo explores reduced-alcohol or dealcoholised drinks and kefir; it should not be assumed entirely alcohol-free. The bioluminescence and plankton-rice menu is separately priced at €550 per person and requires advance arrangement through reservas@aponiente.com.

Dietary, access and family arrangements

The reservation page still links a FAQ whose filename dates to November 2024. It describes a three to three-and-a-half-hour meal, no dedicated vegetarian menu and dietary requests before finalising a reservation; allergies first notified on the day cannot be accommodated. It asks wheelchair users and families with young children to contact reservations. It lists no highchairs, babysitting or pushchairs during service.

Changes and punctuality

That linked FAQ asks for at least 72 hours for changes or cancellation, or five days for parties of seven or more. Later changes carry a per-person card charge whose amount it does not specify. Round tables cannot be joined and a single table accommodates up to eight. Late arrival may mean omitted courses. Agree the current dated booking terms and any charge through the official reservation route.

The correct location and contact

Use Francisco Cossi Ochoa s/n in El Puerto de Santa María, not a Cádiz-city restaurant. The operator publishes +34 956 851 870, +34 606 225 859 and reservas@aponiente.com. Its linked FAQ describes parking behind the town’s railway station and recommends long trousers and closed shoes without requiring formal dress.
