Asador Etxebarri
Wood-fired cooking in rural Axpe
Asador Etxebarri is Bittor Arginzoniz’s restaurant in Axpe, in the Atxondo valley of Bizkaia. Michelin’s 2026 selection gives it one star; its review describes a restored country house and precise grilling with different woods and purpose-built utensils.
The operator lists a €300 tasting menu per person, tax included and drinks excluded, alongside an à la carte option. The whole table chooses the same format. Meat and fish are central to the offer; there is no vegetarian or vegan menu. Seasonal dishes and the woods used for cooking shape the meal rather than a guaranteed list of signature plates.

Azurmendi
A tasting meal that moves through Azurmendi’s spaces
Azurmendi is Eneko Atxa’s restaurant in Larrabetzu, Bizkaia, with three Michelin stars in the 2026 selection. Its Gran Menú moves through a welcome picnic, the kitchen and garden spaces before the main meal, in a building overlooking the surrounding hillside.
The Gran Menú is €350 per person, with optional wine pairings at €150 or €300 per person; the menu states VAT is included. Seasonal seafood, meat and desserts follow the opening stages, and products may change. Vegetable-titled dishes can contain meat, egg or dairy, so they do not establish a vegetarian menu or suitability for a particular allergy.

Arzak
Basque market cooking with four-generation history
Arzak is the Arzak family’s restaurant at Avenida Alcalde Elósegui 273 in Donostia–San Sebastián. Its history reaches back to the family house built in 1897; Juan Mari and Elena Arzak’s cooking combines Basque market traditions with evolving signature dishes. It has three Michelin stars in 2026.
The reservation page lists a €315 tasting menu and a €285 à la carte selection of appetiser, starter, main and dessert, per person including 10% VAT and excluding drinks. Its wine-pairing option instead quotes a €365 menu plus €220 pairing for the whole table. Those menu bases differ: obtain the written price for the chosen option rather than adding pairing to €315. Dietary restrictions can require a simpler menu agreed with the team.

Akelarre
Pedro Subijana’s tasting-menu restaurant overlooking the Bay of Biscay
Akelarre is Pedro Subijana’s restaurant in Igeldo, above San Sebastián, with three Michelin stars in 2026. A founder of New Basque Cuisine, Subijana has worked here since 1975; local products and contemporary techniques shape the tasting-menu restaurant.
Akelarre opened in 1970 and the hotel and Espazio Oteiza followed in 2017. The tasting-menu restaurant, hotel stay and Oteiza’s more informal food service have separate booking and contact arrangements. Oteiza’s daily snack, lunch and dinner service does not establish the tasting restaurant’s timetable.

A full tasting-menu visit to Girona
El Celler de Can Roca is the Roca brothers’ restaurant in Girona: Joan leads savoury cooking, Josep the wine service and Jordi desserts. It holds three Michelin stars in the 2026 selection. The 50 lists it in Best of the Best after its 2013 and 2015 wins.
The operator describes Festival as appetisers, twelve dishes and four desserts, with the same menu for the whole table. Drinks and optional wine pairing are separate. Allow around three and a half hours. Dietary adaptations need advance discussion; guests concerned about cross-contamination are directed to the restaurant before booking. Ask the restaurant for the current menu price and drinks list.

Quique Dacosta’s Mediterranean tasting menu in Dénia
Quique Dacosta Restaurante is the chef’s Dénia restaurant at Rascassa 1, with three stars in Michelin’s 2026 selection. Its OCTAVO menu explores Mediterranean ingredients through a staged meal that may begin in the glass garden when weather permits.
OCTAVO is €315 per person. Optional wine pairings are €165 or €215 for the premium selection; the published prices include 10% VAT. Welcome drinks are excluded from the pairing. There is also a wine list and non-alcoholic drinks. This Dénia booking is separate from the group’s Deessa in Madrid and its Valencia restaurants.

Aponiente
Ángel León’s marine tasting menu and tidal-mill setting
Aponiente is Ángel León’s restaurant in a former tidal mill in El Puerto de Santa María, Cádiz. It has three stars in Michelin’s 2026 selection. Marine ingredients, research and the surrounding marshland shape a tasting-menu experience that extends beyond conventional fish courses.
The main 2026 menu PDF lists the tasting menu at €400 per person, VAT included. Its marshland component depends on wind, tides, insects and other natural conditions; the experience can take place entirely indoors. An outdoor section is therefore not guaranteed. The current page also links an older April menu file, so use the main June PDF and the terms quoted for the selected date.

Match the meal to your travel plans
Allow travel time to Axpe, Larrabetzu, Igeldo, Girona, Dénia and El Puerto de Santa María rather than assuming a city-centre table.
A request, card guarantee, bank preauthorisation and prepaid reservation represent different commitments. Use the exact menu and dated terms.
Aponiente’s outdoor marsh section depends on conditions. Etxebarri has no vegetarian or vegan menu; Azurmendi excludes guests under ten. Other dietary and child arrangements differ.
Martín Berasategui’s Lasarte-Oria restaurant is separate from Lasarte Barcelona. Its €395 meal price differs from the €220 per-person group prepayment or late-cancellation charge; notice periods vary by party size.
