Sushi, broths and a composed meal

The meal combines Japanese kaiseki-sushi traditions with seafood from the French and Atlantic coasts. The operator describes dashi and broths alongside fish such as sea bream, squid and bluefin tuna, with sake and tea among the drinks.

Watanabe’s sushi, Donckele’s sauces and Frédéric’s desserts make this a composed gastronomic meal. The setting uses dark walnut and other woods, with a stone-and-bamboo fountain at the entrance.

The Yume menu and dietary limits

The operator lists Yume at €420, with optional sea-urchin temaki for €30 and truffle for €95. The booking page warns that the menu price may change before the reservation date.

Seafood, soy, gluten and mainly raw and cooked fish are fundamental to the menu; the restaurant states it cannot make exceptions.

Dinner, children and arrival time

Hakuba opens for dinner Tuesday to Saturday. The reservation page describes an experience of approximately three hours and booking four months in advance. Children are welcome on the same menu as their accompanying adults; pets are excluded.

The restaurant page says arrivals after the reserved time are not accepted. The booking page instead says a delay over 15 minutes prevents service of the complete menu. Plan to arrive by the reservation time and settle any exception directly with the restaurant.
