The counter and the menu

The restaurant centres on a seven-metre hinoki counter. Michelin describes two omakase versions chosen when booking. The official site also presents sake, tea and wine pairings; choose the menu and any drinks explicitly rather than assuming they share one charge.

Sittings and restrictions

Dinner runs Tuesday–Saturday at 19:00 and 21:30, with Saturday lunch as well. The sequence lasts just under two hours; first-sitting guests leave by 21:15 and lateness over 15 minutes can cost courses. A card imprint is required, and changes within 48 hours attract a published €200-per-person penalty. Discuss dietary requirements before reserving: an allergy to all seafood cannot be accommodated.
