Top 10 Restaurants in Madrid (2026)
Which Madrid restaurant should you choose?
Choose DiverXO for Dabiz Muñoz’s imaginative tasting menu, Coque for an art-led journey through several spaces, or Smoked Room for fourteen-seat fire and smoke cooking. DSTAgE, Paco Roncero and Gaytán offer different creative tasting experiences. Deessa adds the Ritz setting and Quique Dacosta’s cuisine. For more freedom over individual dishes, start with Saddle or historic Lhardy; for a meal built around the day’s fish, choose Desde 1911.

How to use this shortlist
These ten restaurants are our editorial recommendations for different special meals in Madrid: creative tasting menus, formal dining, seafood and the city’s classic restaurant tradition. Groups describe the strongest reason to choose each, rather than a tested best-to-worst score. We compared cuisine, setting, ordering freedom, menu cost and material booking conditions using current published sources reviewed on 18 October 2026. Menu figures are snapshots, with drinks and service restrictions specified where known; they do not establish a live table or total bill.

For an imaginative meal that becomes an occasion
-
DiverXO
Dabiz Muñoz’s imaginative destination tasting menu
Choose DiverXO for Dabiz Muñoz’s inventive cooking and a meal built around surprise. The three-Michelin-star Madrid restaurant serves its €450 tasting menu only, with VAT included and drinks extra. Its separate alcohol-free liquid menu or wine pairings can extend the experience. Vegetarian and vegan menus are unavailable; severe allergies need discussion before payment.

Coque
The Sandoval family’s art-led journey through several spaces
Choose Coque when the journey through the restaurant is part of the occasion. Mario, Juan Diego and Rafael Sandoval lead kitchen, dining room and wine at this two-Michelin-star address. For creative tasting menus with different formats
-
Smoked Room
Fourteen-seat fire and smoke cooking inside Leña Madrid
Choose Smoked Room for a small-room experience where embers and smoke shape Japanese-influenced cooking. Its Madrid venue seats fourteen, inside Leña at the Hyatt Regency Hesperia. Kõsei no Hi is displayed at €210 per person and Matsuri at €280. Jū ni is a separate pairing; the named experiences should not be read as one inclusive meal price.

DSTAgE
Diego Guerrero’s creative menus in a Salesas loft
Choose DSTAgE for Diego Guerrero’s creative cooking in an exposed-brick loft with an open kitchen. It offers DTASTE, DSTAGE and DENJOY: 16, 18 or 22 preparations at €195, €210 or €230 per person, VAT included. The whole table takes the selected menu; optional wine pairings cost extra. Severe allergies or restrictive diets require discussion with the restaurant.

-
Paco Roncero
Madrid-inspired creative cooking above Calle Alcalá
Choose Paco Roncero for a creative interpretation of Madrid in a top-floor setting on Calle Alcalá. Gran Madrid and Madrid, Madrid, Madrid are the longer menus; Esencia is the shorter option. Thursday/Friday lunch Esencia is €190 without pairing or €280 with it. Evening/Saturday Esencia is €280 with pairing, so the weekday starting price does not apply to every service.

-
Gaytán
Seasonal tasting menus around Javier Aranda’s open kitchen
Choose Gaytán to watch the kitchen at work while exploring Javier Aranda’s seasonal cooking. Sculptural wooden columns frame its large oval kitchen. Inaurem and Javier Aranda are named tasting menus, displayed at €150 and €210, with pairing separately linked. The menus range across vegetables, fish and meat; a particular dish follows the current season.

For formal dining and a distinctive room
-
Deessa
Quique Dacosta’s fine dining at the Madrid Ritz
Choose Deessa for Quique Dacosta’s land-and-sea cooking in the Alfonso XIII room at Mandarin Oriental Ritz, Madrid. Historical and Contemporary are the full menu formats. Chronos lets diners select dishes, but is limited to Wednesday/Thursday lunch and dinner and Friday lunch, excluding public holidays. The restaurant accepts guests aged 12 and over; its terrace overlooks the Ritz Garden.

-
Saddle Madrid
Classic restaurant service with à la carte freedom
Choose Saddle for classic-contemporary cooking and the freedom to build a meal from full or half portions. Seasonal dishes and dining-room service make it a strong fit for a formal dinner or business meal without committing to one compulsory long tasting sequence. Its cocktail bar and private rooms are separate experiences; the bar’s walk-in policy does not reserve a restaurant table.

For seafood or classic Madrid dishes
-
Desde 1911
A daily fish-led menu from Pescaderías Coruñesas
Choose Desde 1911 when the day’s seafood matters more than a fixed signature dish. Pescaderías Coruñesas’ restaurant builds its menu around daily arrivals, with traditional techniques including a wood-fired oven. Choose three to six starters, then the one main fish selected for the day, followed by cheese and dessert. The displayed menu range is €190–€270; it is not an unrestricted fish list.
-
Lhardy
Madrid heritage and classic dishes near Puerta del Sol
Choose Lhardy for a meal rooted in Madrid’s restaurant history. Established in 1839 near Puerta del Sol, it still serves cocido, Wellington and soufflé alongside newer fish and meat dishes. Cocido is displayed at €68; individual dishes give another way to order. Sunday service ends at 16:00, and shop or takeaway hours do not extend restaurant dinner service.
Choose the meal before choosing a table
DiverXO and Coque make sense when the restaurant is the centre of the day: the former for Muñoz’s creative tasting menu, the latter for an art-and-food route. Smoked Room gives fire and smoke a smaller setting. DSTAgE offers three whole-table lengths; Paco Roncero makes Madrid the theme; Gaytán brings preparation into view around its oval kitchen. Deessa suits the Ritz setting and Dacosta’s land-and-sea cooking.
For greater ordering freedom, Saddle’s full and half portions let you build a meal; Lhardy offers cocido and other classic dishes near Puerta del Sol. Desde 1911 is the fish specialist, with a daily main fish selected by the restaurant. Choose that format because you want the day’s arrivals, rather than an unrestricted fish list.
Budget for the actual service and drinks: DiverXO’s ticket excludes them; Coque’s pairings are optional additions; DSTAgE’s pairings are extra. Paco Roncero’s €190 Esencia applies to Thursday/Friday lunch without pairing, while evening/Saturday Esencia is €280 with pairing. Deessa Chronos is restricted to its named weekday services and excludes public holidays.
Discuss dietary and access requirements before a prepaid booking. DiverXO has no vegetarian or vegan menus; Coque publishes a vegetarian alternative, while Smoked Room describes limited adaptations. Deessa is 12+. Specific terraces, private rooms, gift cards and bar visits require their own arrangements. For Smoked Room, the operator’s conflicting opening schedules make the confirmed service date especially important.
Questions before you choose
Does every restaurant require a full tasting menu?
No. Saddle offers seasonal à la carte dishes in full or half portions, and Lhardy publishes individual dishes and cocido. DiverXO is tasting-menu only. Deessa Chronos offers dish selection during its specified weekday services.
Does the DiverXO ticket include drinks?
No. The €450-per-person ticket includes VAT and the tasting menu, with drinks extra. The alcohol-free liquid menu and wine pairings are separate choices. A date cannot be changed, although the ticket can be transferred; the published refund deadline is at least two weeks before the visit.
Can I book Deessa Chronos at the weekend?
No. Chronos is listed for Wednesday/Thursday lunch and dinner and Friday lunch, excluding weekends and public holidays. Historical and Contemporary are separate full-menu choices. Deessa accepts guests aged 12 and over.
Can everyone choose a different DSTAgE menu length?
The operator requires service to the whole table. Choose DTASTE, DSTAGE or DENJOY together, then discuss any severe allergies or restrictive diets with the restaurant. Wine pairing is optional and priced separately.
Can I choose any main fish at Desde 1911?
No. You choose three to six starters, followed by the single fish the restaurant selects from that day’s arrivals, then cheese and dessert. The 3+1 to 6+1 menu lengths do not mean a choice from an unrestricted list of main fish.
Does Saddle Bar’s walk-in policy also reserve restaurant dinner?
No. The bar’s no-reservation statement concerns the cocktail bar. Restaurant dining and named private rooms have separate arrangements; reserve the actual format and room you want.
How we selected these places
We recommend these ten for distinctive cooking, setting and useful meal choices in Madrid. Comparison uses current operator menus, policies and contact pages, with Michelin and Madrid tourism supporting restaurant identity and recognition. Creative tasting, formal dining, seafood and classic Madrid choices are grouped by fit. Michelin stars are cited distinctions, not customer scores or a TRP-tested ranking. We have not eaten here, assessed service or accessibility, or made a booking.
